Molecular biologists from food manufactur­er Danisco discover bacteria have a sophistica­ted immune system. They call it CRISPR. It can recognise and edit gene sequences in viruses, which kills the invaders. Danisco uses CRISPR to make virus-proof bacterial cultures for yoghurt and cheese, preventing the loss of millions of dollars in spoiled production.
