Food Balls Washed Like Fruit Skin

WikiCell is a new type of food, in which the protective packaging is edible.

So far, the manufactur­er has made balls containing ice cream, but in principle, the contents could be any type of food. On the exterior of the core, there is a membrane made of three ingredient­s: small edible particles, chitosan (a carbohydra­te molecule extracted from crustacean­s), and calcium ions. The edible particles could be chocolate or fruit, providing the membrane with taste.

The exterior layer is isomalt, which can be extracted from beetroots. The substance does not crystallis­e as readily as ordinary sugar, so it can easily be shaped into an unbroken, smooth shell. The shell can be washed like the skin of fruit, before the ball is eaten.
