Glazed brownie with chocolate mousse, and Mango caramel sable
Admittedly, brownie is my main guilty pleasure — so glaze one and put rounds of perfectly smooth chocolate mousse on top with a daisy chocolate transfer, and I’m in heaven. Next on the table were perfectly glazed red and orange hemispheres mounted on a sable base (a French shortbread-like biscuit). The slightly bouncy mound is a caramel crémeax shell with a mango filling.
