Re­viewer: Mary Ann El­liott As Molly Shuster says, get­ting a healthy home-cooked meal on to the ta­ble at din­ner­time isn’t al­ways easy. How­ever, her book aims to change that. Us­ing just one cook­ing pan, you can cre­ate an easy meal, no mat­ter what your time-frame.

Molly’s book shows how to com­bine meat, fish and veg­eta­bles flavoured with herbs and spices, adding rice, cous­cous or quinoa, all in the one pan for an easy clean-up after­wards.

You will need three ba­sic tins of dif­fer­ent sizes (de­pend­ing which dish and method you choose) and foil to go over the top if roast­ing or grilling.

I es­pe­cially like the be­fore-and-af­ter pic­tures side by side, such as pancetta chicken laid out in the pan, ready to roast. Molly de­tails when to add in­gre­di­ents. Whether it’s as sim­ple as chorizo and beans, baked haloumi with to­mato and gar­lic, or peach cus­tard tart, these no-fuss recipes look de­li­cious.
