PETROULA Tomazos loves nothing more than whipping up and decorating a cake and the savvy business woman has made a job of it. Sweet Little Vintage is run from Ms Tomazos’ kitchen and serves up custom order cakes and cupcakes. Now’s she’s branching out to include cakes in a jar.

The luxe jar desserts will be released later in the year and are made from cakes and mousses and an array of toppings.

Flavours for the jar desserts include Tim Tam mousse, “malt in the mouth” teaser mousse, sinful pleasures chocolate mousse, salty sensations caramel mousse red velvet crush, Ferrero frenzy, banoffie and lemon meringue fluff.

She said the concept was designed for gifts or to be used at weddings or christenin­gs.

Sweet Little Vintage began in 2014 as a stall in the Palmerston markets selling cupcakes and Greek sweets.

Ms Tomazos said she had a request from a customer to create a wedding cake and jumped at the chance.

She had never made a wedding cake before but the opportunit­y led her to stop making Greek sweets and focus on designing boutique cakes.

“I started off with Greek sweets and cupcakes, we did that for the first year and the second year we stopped the markets and went for the celebratio­n cakes,” she said.

A year into the business, Ms Tomazos quit her job and began making cakes full-time.

A typical week sees her make between five and 10 cakes as well as cupcakes.

Everything is baked in her family kitchen, but she has upgraded to a commercial fridge to store the cakes. Her sweets come in a range of flavours and include chocolate, red velvet, vanilla, caramel and marble.

Cupcakes can also be topped with a range of extra flavours Maltesers, Snickers and lemon meringue.

The cakes can be decorated in almost anyway a customer wants, but fondant icing is not available as Ms Tomazos said the cakes tend to go dry when that style icing is used. A buttercrea­m icing is used. She said she had mastered a buttercrea­m recipe to stop it from melting in Darwin’s hot and humid conditions.

She said baking was a creative release for her and she thrived off creating unique designs for customers.
