Julie Morris began making flavoured and spiced salts by accident one night while making spaghetti bolognese. She accidental­ly knocked her glass of red wine into her container of salt and instead of throwing it out she decided to dry the salt. She said the results were amazing. “I tasted it and it was awesome it was really nice,” she said.

“I just thought, I wonder if I could make something else.

“I just started with what I had in the garden — bird’s eye chillies.

“From there and I kept experiment­ing and learning about herb and spices and how salt reacts with food.”

Since then she has taken to her kitchen and made up a range of 16 flavoured salt blends.

She sells the blends through her business, Pincha Salt.

Pincha Salt is now in its second year, with products sold in Darwin and Palmerston stores.

She said her salt flavours were inspired by her tastes and love of French and Mediterran­ean cuisines.

She said they ranged from chilli salt, Cajun Creole flavours, French flavours with tarragon, Mediterran­ean spice and a Greek inspired mint salt.

She also makes a range of salts blended with native ingredient­s including native basil, Kaffir lime, lemongrass, Kakadu plum and lemon myrtle.

“I try and use as much local bush tucker as I can get and get organic ingredient­s,” she said.

Mr Morris is also looking to develop a truffle salt. “When the truffles come out in winter time I’m going to do a truffle salt and use Tasmanian native spices,” she said.

Ms Morris said the salts used also played a role in the final taste of the product.

She said kosher salt was a larger salt crystal and provided a crunch over the typical table salt.

Himalayan rock salt is used by Ms Morris in her Redhead salt which is infused with beetroot.

Ms Morris is developing a range of salts for foodies who have food allergies to onion and garlic but love the flavour of those ingredient­s.

For those after flavoured sugars she has rose petal doughnut sprinkle, mango sprinkles and strawberry sprinkles.
