the flavours of the NT with Wharf One’s new Top End tasting platter.

The casual dining restaurant’s platter features typical Territory foods such as crocodile, beef, barra and kangaroo.

Wharf One Food & Wine general manager Pina Sommervill­e said the idea behind the tasting plate was to give people the chance to try a variety of NT foods.

“We had lots of requests from locals and tourists for kangaroo and crocodile,” she said. “People want to taste it but they don’t want a full meal.

“So that’s why we created the little taste plate, so people can experience it.

“It was just looking at how we could get the best of the Territory flavours that people talk about but can never find on a menu.”

Ms Sommervill­e said Wharf One’s chef Benn Rowe created the plate over a few weeks.

“He has a real love and passion for using local produce and native plants like wattle seeds, paperbark and gum leaves and smoking through our wood grill,” she said.

The plate includes, Humpty Doo barramundi ceviche; barbecue prawns with prawn head Marie Rose and wattle seed; NT brahman croquettes; paperbark smoked kangaroo with coal roaster beetroot and labneh; and crocodile and lemon myrtle springs rolls with green mango and sweet and sour sauce.

Ms Sommervill­e said the use of native ingredient­s elevated the flavours of the meats.

“The wattle seed on the prawns has a little coffee flavour to it and brings out different unique flavour of the prawn that you would never usually mix,” she said.

Wharf One is open seven days a week for lunch and dinner.
