TRAIL MIX COOKIES
MAKES 18 PREP 15 MINS COOK 15 MINS
• 125g unsalted butter, chopped, at room temperature
• ½ cup caster sugar
• 2 tsps vanilla extract
• 1 free-range egg
• 1 cup plain flour
• ½ tsp bicarbonate of soda • 200g packet trail mix 1 Grease and line two oven trays with baking paper.
2 Beat butter, sugar and vanilla in a small bowl of an electric mixer until light and fluffy. Beat in egg until combined. Transfer mixture to a large bowl.
3 Sift combined flour and soda over butter mixture. Stir to combine. Stir in trail mix. 4 Place slightly heaped tablespoons of mixture, about 5cm apart, onto prepared trays.
5 Cook in a moderately slow oven (160°C) for about 12 to 15 minutes, or until golden. Stand on trays for 15 minutes.
6 Transfer cookies to a wire rack to cool.
