Ricotta-filled cannoli

Take 400g fresh ricotta and add ½ cup each finely grated chocolate and icing sugar. Then add 1 tblsp grated orange zest and ¼ cup thickened cream. Mix well. Pipe into 10 ready-made cannoli shells. Dust with icing sugar and cocoa to serve.
