Mash is the perfect accompanim­ent for any meal – especially hearty stews or casseroles.

To make a basic mash, peel 1kg sebago potatoes and cut into quarters.

Boil until tender. Drain. Return to same saucepan. Mash until smooth. Combine 50g butter and 1 cup milk in a saucepan. Stir, without boiling, until hot. Beat into mash in two batches. Season with salt and pepper.

You can also try these tasty variations…

• Garlic mash: Add 1 crushed clove garlic to the milk and butter mixture. • Herb mash:

Stir through any fresh chopped herbs after milk mixture. • Cheesy mash:

Add ½ cup of your favourite grated cheese after milk mixture.

• Sweet potato mash: Replace

500g of the sebago potatoes with sweet potatoes.
