BAKLAVA PANCAKES WITH HONEY SYRUP

2 tsps ground cinnamon
200g bottle Green’s Original Pancake Shake
1 tblsp honey
½ cup slivered almonds, toasted cup chopped pistachios,
toasted
25g unsalted butter, softened Fresh sliced strawberries and
vanilla ice-cream, to serve HONEY SYRUP
cup caster sugar
2 tblsps honey ¼ cup orange juice 1 tsp vanilla extract
1 To make honey syrup, combine all ingredients in a medium saucepan. Add 2 tblsps of water and stir over a low heat until sugar is dissolved. Bring to a boil. Gently boil for about 5 minutes, or until slightly thickened. Remove from heat. Cool for 10 minutes.
2 Add cinnamon to the bottle of pancake mix. Following the directions on the bottle, fill with water. Add the honey and shake well for 1 minute.
3 Place almonds and pistachios in a small bowl and stir to combine. Set aside ½ cup of nuts for serving.
4 Melt about 1 tsp of the butter in a large non-stick frying pan over a medium to high heat. Pour about 2 tblsps of the batter into pan. Repeat to make another two pancakes. Sprinkle about 2 tsps of the remaining nuts over each pancake.
5 Cook for about 1½ minutes, or until bubbles start to appear on the surface, then turn pancakes over. Cook for a further 1 minute, or until golden underneath. Remove from the pan and cover to keep warm.
6 Repeat with remaining butter, pancake batter and nuts to make eight pancakes in total.
7 Serve warm pancakes with strawberries and vanilla ice-cream. Sprinkle with reserved nuts. Drizzle with honey syrup.
