50g UNSALTED butter, chopped 2 free-range eggs
½ cup caster SUGAR
1 tsp VANILLA extract
1½ cups plain our
½ tsp baking POWDER
100g white cooking chocolate, nely chopped
Chocolate Sauce
200g block dark cooking CHOCOLATE, chopped, melted
½ cup thickened cream
1 GREASE and line two large oven trays with baking paper.
2 Place dark chocolate and butter in a large HEATPROOF bowl over a large saucepan of SIMMERING water. Stir until smooth. Remove and cool to ROOM temperature.
3 Beat eggs, sugar and vanilla in a SMALL bowl of an electric mixer for about 5 minutes until thick and pale. STIR into the chocolate mixture. Sift over combined our and BAKING powder. Add white chocolate and stir until combined. Refrigerate, COVERED,until rm.
4 ROLL two tblsps of mixture into balls. Place them 5cm apart onto prepared trays, FLATTEN slightly.
5 Cook both trays in a MODERATELY slow oven (160°C) for about 18 minutes, swapping trays halfway through cooking, or until slightly rm to touch. Stand cookies on trays for 10 minutes.
6 Meanwhile to make sauce, combine MELTED chocolate and cream. Stir until SMOOTH.
7 Serve WARM cookies topped with vanilla ice-cream, if desired. DRIZZLE with warm sauce.
