BASIC COUSCOUS

PREP + COOK TIME 10 MINUTES SERVES 4

1½ cups (300g) instant couscous

20g butter, chopped

1¼ cups (310ml) boiling water or chicken stock

1 Place couscous and butter in a medium heatproof bowl. Add the boiling water. Cover with plastic wrap; stand for 5 minutes.

2 Fluff the couscous with a fork. Season to taste. Serve as is, or as one of the variations on following pages.
