BIRCHER MUESLI

PREP TIME 20 MINUTES (+ REFRIGERAT­ION) SERVES 6

2 cups (180g) traditiona­l rolled oats 1¼ cups (310ml) unsweetene­d

apple juice

1 cup (280g) natural yoghurt

2 medium apples (300g)

¼ cup (35g) roasted slivered almonds ¼ cup (40g) currants

¼ cup (20g) toasted shredded coconut 1 teaspoon ground cinnamon

½ cup (140g) natural yoghurt, extra 1 Combine the oats, juice and yoghurt in a medium bowl.

Cover; refrigerat­e overnight.

2 Peel, core and coarsely grate one apple; stir into oat mixture with nuts, currants, coconut and cinnamon.

3 Core and thinly slice remaining apple. Serve muesli topped with extra yoghurt and apple slices.
