FAIRY PRINCESS CAKE
PREP TIME 2 HOURS (+ COOLING) SERVES 12
2 x 340g packets buttercake mix 25cm round prepared plate or board 500g ready-made soft icing
1 cup (160g) icing sugar, to dust purple food colouring
½ cup (160g) apricot jam,
warmed, sieved
DECORATIONS
28cm dressed doll butterfly wings on a stick 30cm ribbon small butterfly decoration small butterfly wand
1 Preheat oven to 180°C/160°C fan. Grease a 2.5-litre (10-cup) Dolly Varden pan.
2 Make cakes according to the directions on packets; pour into pan. Place pan on an oven tray; bake for 1 hour or until a skewer inserted in the centre comes out clean. Stand cake for 5 minutes before turning out onto a wire rack to cool.
