BUTTER CREAM

PREP TIME 5 MINUTES MAKES 1 QUANTITY

125g unsalted butter, softened 1½ cups (240g) icing sugar 2 tablespoon­s milk

1 Beat the butter in a small bowl with an electric mixer until as white as possible.

2 Gradually beat in half the sifted icing sugar; add milk, then remaining icing sugar.
