SELECT YOUR SALT

Use a good-quality, non-iodised salt. One of the best is rock sea salt. Rather confusingly, the “rock” in this salt refers to the size of the crystals and their rock-like appearance. This is simply sea salt in large, rock-like crystals. For curing, use it either directly or dissolved as brine.
