SOFT POLENTA
PREP + COOK TIME 30 MINUTES SERVES 4
Bring 1 litre (4 cups) stock, water or milk (or half-stock and half-milk) to the boil in a large deep saucepan. Add 1 cup (170g) polenta in a thin, steady stream, whisking until the mixture comes to the boil. Reduce heat to low; cook, stirring with a whisk, for 25 minutes or until soft and thick. Stir in 30g chopped butter and ½ cup (40g) grated parmesan. Season to taste. Adjust the consistency with a little extra milk if needed. Serve immediately.
