TROPICAL MUESLI SLICE
PREP + COOK TIME 55 MINUTES (+ COOLING) MAKES 20
125g unsalted butter, chopped coarsely 1/3 cup (75g) firmly packed brown sugar 2 tablespoons honey 1½ cups (135g) traditional rolled oats ½ cup (75g) self-raising flour 1½ cups (225g) finely chopped dried tropical fruit 1/3 cup (25g) desiccated coconut
1 Preheat oven to 160°C/140°C fan. Grease a 20cm x 30cm slice pan; line base and long sides with baking paper, extending paper 5cm over sides.
2 Stir butter, sugar and honey in a medium saucepan over low heat for 2 minutes or until sugar dissolves. Stir in remaining ingredients. Press mixture firmly into pan; level surface. 3 Bake for 40 minutes or until golden brown. Cool completely in pan (slice will firm).
