TOFFEE APPLE SLICE

PREP + COOK TIME 1 HOUR (+ STANDING & COOLING) MAKES 30

¾ cup (110g) potato flour

¾ cup (120g) brown rice flour 1 teaspoon bicarbonat­e of soda 1 cup (220g) firmly packed light

brown sugar

3 medium apples (450g), peeled,

cored, grated coarsely

3 eggs

¾ cup (180ml) vegetable oil

WALNUT PRALINE

¾ cup (165g) caster sugar 2 tablespoon­s water

½ cup (55g) finely chopped

roasted walnuts

APPLE ICING

2 cups (320g) pure icing sugar ¼ cup (60ml) apple juice,

approximat­ely

1 Preheat oven to 180°C/160°C fan. Grease a 24cm x 32cm swiss roll pan; line base and long sides with baking paper, extending paper

5cm over sides.
