BREAKFAST PEAR & APPLE CRUMBLE

PREP + COOK TIME 45 MINUTES SERVES 2

1 large green-skinned apple (200g),

peeled, cored, cut into 3cm pieces 2 small pears (360g) peeled, cored,

cut into 3cm pieces

1 tablespoon water

2 teaspoons lemon juice

2 teaspoons pure maple syrup

½ cup (45g) traditiona­l rolled oats 2 tablespoon­s finely chopped walnuts 2 teaspoons pepitas

1 tablespoon olive oil

1 tablespoon pure maple syrup, extra ½ cup (130g) low-fat greek-style

natural yoghurt

1 Preheat oven to 200°C/180°C fan. 2 Place apple and pear in a small saucepan with the water over medium heat; cover, cook for 8 minutes or until just tender. Stir in juice and syrup. Transfer to a 3-cup (750ml) ovenproof dish.

3 Combine oats, walnuts, pepitas, oil and extra syrup in a medium bowl. Sprinkle mixture over apple mixture.

4 Bake for 25 minutes or until the crumble is golden. Serve with yoghurt.
