LITTLE CARROT CAKES WITH DATE FROSTING

You need about 2½ medium carrots to make 2 cups grated carrot. You could also cook the cake mixture in a 20cm x 30cm x 3cm slice pan. Line the base with baking paper, extending the paper 5cm over the long sides; bake for 25 minutes.
