BAKED BEANS & SMOKED CHEDDAR POTATOES

PREP + COOK TIME 1 HOUR 10 MINUTES SERVES 8

Preheat oven to 200°C/180°C fan.

Place 8 coliban potatoes on an oven tray; drizzle with 2 teaspoons olive oil. Roast for 1 hour or until tender; season. Cool on tray for 5 minutes. Cut a cross in the potatoes; squeeze upwards from the bottom. Top with 420g canned baked beans and ⅓ cup coarsely grated smoked cheddar cheese. Season. Bake for a further 5 minutes or until cheese melts. Top with fresh flat-leaf parsley leaves. Season.
