A ZUCCHINI PIZZA BASE

PREP + COOK TIME 40 MINUTES (+ STANDING) MAKES 2 (SERVES 2)

3 medium zucchini (360g), grated coarsely ½ cup (40g) finely grated parmesan ½ cup (75g) plain flour 2 eggs, lightly beaten

Preheat oven to 240°C/220°C fan. Line two large oven trays with baking paper. Mark 25cm rounds on paper; turn paper over. 2 Place grated zucchini in a clean tea towel; squeeze out as much liquid as possible. 3 Place zucchini in a large bowl. Stir in parmesan, flour and egg until combined; season. Spread zucchini mixture over rounds on trays. Bake zucchini bases for 20 minutes. Turn over; bake for a further 5 minutes or until crisp and golden.
