MINUTE STEAK SANDWICH

PREP + COOK TIME 10 MINUTES MAKES 4

2 tablespoon­s olive oil

1 medium brown onion (150g), sliced thinly

4 beef minute steaks (250g)

25g baby rocket leaves

8 slices sourdough bread, toasted

12 cornichons, sliced lengthways

1 Heat oil in a large frying pan over high heat; cook onion, stirring, for 4 minutes or until golden.

2 Push onion to one side of pan, add steaks; cook steaks for 1 minute each side or until done to your liking.

3 Place rocket on 4 slices of toast; top with steak, onion and cornichons. Top with the remaining 4 pieces of toast.
