DARK ALE SKIRT STEAK WITH CHIMICHURRI
You can use your favourite steak cut for this recipe. While skirt steak is a slightly chewy cut of beef, it offers great flavour. It’s important to rest the meat after cooking and to slice it across the grain for the best results.
Serve between slices of oiled, chargrilled sourdough with sliced tomato, baby cos and a spoonful of the chimichurri as a filling for a special steak sandwich, with chips alongside.
