DARK ALE SKIRT STEAK WITH CHIMICHURRI

You can use your favourite steak cut for this recipe. While skirt steak is a slightly chewy cut of beef, it of­fers great flavour. It’s im­por­tant to rest the meat af­ter cook­ing and to slice it across the grain for the best re­sults.

Serve be­tween slices of oiled, char­grilled sour­dough with sliced tomato, baby cos and a spoon­ful of the chimichurri as a fill­ing for a spe­cial steak sand­wich, with chips along­side.
