APPLE PASSION PUNCH

PREP 15 MINUTES SERVES 8 (MAKES 8 CUPS)

8 passionfru­it

500g piece watermelon,

chopped finely

1 medium pink lady apple (150g),

chopped finely

1 medium green apple (150g),

chopped finely

1/3 cup small fresh mint leaves

1.5 litres (6 cups) chilled

no-added-sugar clear apple juice

1 Remove pulp from passionfru­it. Strain juice into a large jug or punch bowl. Add 2 teaspoons seeds to juice; discard remaining seeds.

2 Add watermelon, apples, mint and apple juice.
