Devilled sausages
SERVES 4 PREP AND COOK TIME 30 MINUTES ¾ cup (180ml) tomato sauce
2 cloves garlic, crushed
2 tablespoons Worcestershire sauce 2 tablespoons Dijon mustard 2 tablespoons curry powder 2 tablespoons brown sugar 2 tablespoons white vinegar
8 (650g) good-quality thick sausages mashed potato, cucumber and tomato, to serve
1 Place all the sauce ingredients, except for the sausages in a large saucepan, over medium-high heat (see Julie’s tip). Stir until the curry sauce comes to the boil; remove from the heat.
2 Heat a large frying pan over mediumhigh heat and brown sausages on all sides. When sausages are browned, but not yet cooked through, add to the curry sauce; bring to the boil. Simmer, stirring occasionally, for about 4 minutes, until the sausages are cooked through and the sauce has thickened. Serve with mashed potato, cucumber and tomato, if desired. Not suitable to freeze or microwave.
