Hemingway’s makes ‘write’ choice putting talented duo into key roles
FAR North beer hub Hemingway’s Brewery has made two high-profile appointments ahead of its expansion to Cairns Cruise Liner Terminal next year.
Anthony Clem will oversee brewing operations at the Port Douglas and Cairns venues.
A former quality brewer at industry heavyweight XXXX, he holds 15 years of industry experience.
Mr Clem, a qualified Master Brewer through the Institute of Brewing and Distilling, said he was enjoying the “public interaction” aspect of his new role.
“I love the industry, the people in it and opportunity to be part of the whole process from ‘grain to glass’,” he said.
In another key appointment, Heath Farrow has returned to the Far North as the brewery’s new head chef.
After working at Vivo Palm Cove from 2008-09, he spent the past eight years at a popular restaurant in Victoria’s Yarra Valley.
“With Hemingway’s Brewery Cairns scheduled to open in the New Year, the importance of good leadership and getting our operational elements right, while maintaining an innovative edge has never been more important,” said coowner Tony Fyfe.
“Our search for the right people to oversee the brewing and dining operations, in what will soon become a much larger and growing concern, took us far and wide.
“Anthony and Heath’s collective experience, energy and passion for what they do is impressive and we are so de- lighted to have people whose talent and calibre is truly among Australia’s best.”
It comes almost 12 months after Hemingway’s Brewery opened at Port Douglas’ picturesque Reef Marina.
In January it was revealed Mr Fyfe and his business partner Craig Parsell had reached an agreement with Ports North to transform Cairns Cruise Liner Terminal’s Shed 2 into another state-of-the-art brewery and restaurant.
After completion, the 1400sq m space will include a 19m bar, a comprehensive kitchen and eight 7000-litre fermentation vessels.
“The quality of the Hemingway’s Brewery product, coupled with the popularity of craft beer, an iconic waterfront location and innovative design concepts will create a unique destination for locals and tourists alike,” Ports North chairman Russell Beer said of the new 10-year lease agreement at the time.
When operational, the new Hemingway’s venue in Cairns has been tipped to provide up to 100 jobs.
