Hotel enjoys a fresh take on herbs

FRESH homegrown herbs aren’t just for high-end restaurant­s any more.

Staff at the Bungalow Hotel on Aumuller St maintain a kitchen garden for their menu, including fresh thyme.

“We are trying to make use of fresh produce anywhere we can,” duty manager Kyle Spero said.

“Chef Kyle is out tending to it every day.”

Mr Spero said the garden had supplied the kitchen with herbs ever since the hotel was revamped in 2016.

“The fresh herbs make a difference to the menu and are used as garnishes,” Mr Spero said.

The My Little Seed Garden has 15 herbs and vegetables, including thyme, lettuce, mint there and cucumber, and is available with the Cairns Post.

Thyme has a piney and peppery taste and can be paired with Mediterran­ean dishes, poultry, fish, tomatoes and lemon.

New seed kits can be picked up from participat­ing newsagents, Coles and Woolworths for just $2.50 with a copy of the Cairns Post every day until Sunday, September 9. Head of Produce, Woolworths.
