Chicken lovers really licking those fingers

A NEW food outlet in Cairns is laying claim to being the first with specially-bred chickens cooked in charcoal.

Finger Lickin Charcoal Chicken on Mulgrave Rd already has a core group of regular customers chirping.

No stranger to the charcoal chicken industry, new business owner Mark Meade operated a successful charcoal chicken shop in Sydney before making a lifestyle decision to pull up stumps and make the move north. After sizing up the market, Mr Meade noticed plenty of kebab places and shops serving Indian but little for lovers of a good charcoal chicken and chips.

Mr Meade said his hommus, tabouli and baba ganoui was all made in-house with fresh and locally sourced ingredient­s.

“We marinate the chicken and use the best charcoal, the garlic sauce and baba ganoui is all made fresh, nothing comes out of a can,” he said.

The shop at 79 Mulgrave Rd uses specially-bred charcoalbi­rds from Steggles in Tamworth.

“I guarantee you it will be the best chicken you will ever eat,” he said. “I roast it on the pit and it give it that smoky flavour, it’s great quality food at a great price.

“And it’s cheaper than Maccas and KFC but nothing processed and it’s all fresh.”

Mr Meade said the lunch time crowd made up of workers from nearby pawn shop and automotive industries is going well. The shop is open until 8pm seven days a week.
