Fresh talent bringing variety to CBD dining

Newcomer offering the best of many worlds for fans of fusion food

- JANESSA EKERT janessa.ekert@news.com.au

A NEW fusion restaurant in the Cairns CBD is one to add to your list of establishments to roadtest in the new year.

Salted Lime, on Shields St, combines modern Australian cuisine with Asian flavours.

The restaurant is the second business for owner and chef Andy Shin, who also runs Sushi Rollking Sheridan.

“I wanted to take things a bit further, so I opened a restaurant,” Mr Shin said.

The menu incorporates Aussie seafood and steak with Thai, Japanese and Korean influences.

“My favourite menu item is definitely wagu beef sirloin steak,” Mr Shin said.

The beef is cooked in a sous vide-style, which is a waterbased cooking method allowing it to maintain all the juices and flavour.

“I also have a homemade garlic seafood sauce and the base of the flavour is very nice,” Mr Shin said.

Salted Lime, which is among a number of new restaurants in Cairns, has so far remained a bit of a secret, although Mr Shin said momentum was growing.

Here are a few more new restaurants and cafes you can try in 2019, if you haven’t already:
