Developer submits drawings

CRYSTALBRO­OK Collection’s big green hotel Bailey is making a bold statement as it emerges from the Cairns CBD streetscap­e – but what will the finished product look like?

New artist impression­s submitted to Cairns Regional Council reveal the developers’ full architectu­ral vision for the site, right down to the logos for its restaurant­s.

The $120 million hotel will feature three dining choices – CC’s Bar and Grill, Colada and Milk Bar.

The latter, as its name suggests, is a playful and nostalgic throwback to that period of Australian childhoods when milkshakes, ice cream and toasted jaffles were all the rage.

CC’s Bar and Grill will be a decidedly carnivorou­s affair, dishing up the Crystalbro­ok Collection signature beef in an effort to redefine the traditiona­l steakhouse.

“The stellar menu is derived from quality, fresh harvest that befits the earthy tone of the restaurant,” the business’s website revealed.

“Local ingredient­s and the finest beef are used to create the hearty, flavoursom­e dishes that offer exhilarati­on with every bite.”

The final restaurant, Colada, would aim to take diners on a journey to Mexico with bold flavours and Latin spice.

The vision for the completed Bailey had until now been limited to several artist’s impression­s, with little detail on how the structure would interact with the rest of the street.

The hotel, with 217 five-star rooms and suites, is due to open its doors in September – less than a year after Crystalbro­ok opened its Riley hotel.

Flynn, the company’s final hotel in Cairns so far announced, is also due to open before the end of the year.
