Teasing taste of line-up at Flynn

CRYSTALBRO­OK Collection staff have broken the code of silence and divulged two signature menu items ahead of one of the city’s most hotly anticipate­d restaurant openings in recent history.

Excitement is building as staff of the new Flynn hotel on the Esplanade prepare to welcome diners tomorrow for the first time to Boardwalk Social.

The market-style eatery will feature six mini-restaurant­s: The Grill, The Chicken Shop, The Fish Shop, The Pizza Shop, The Dessert Bar and the Juice Bar.

It will also offer up to 36 beer taps and more than 40 different types of gins, hoping to cater to crowds of thirsty Cairns residents and ring-ins escaping the tropical heat.

A spokeswoma­n for Crystalbro­ok told the Cairns Post she had her eye on two particular­ly enticing menu items.

First was the “C.A.B.” — local rotisserie chicken soaked in brine for 12 hours, served with avocado, bacon, lettuce, and the signature Boardwalk Social tangy green sauce.

The other option was a more refreshing affair for dessert-lovers – a compressed watermelon infused with White Gin by Crystalbro­ok with fresh berries, pineapple and mint salsa.

“Positions for Boardwalk Social have been filled but we are on the hunt for our next lot of superstar collaborat­ors of Flynn’s two other restaurant­s – Flynn’s Italian, and Whiskey and Wine – as well as the hotel roles, so stay tuned,” a Crystalbro­ok spokeswoma­n said.

Recruitmen­t days for all positions will be held on January 31 and February 1.

Tomorrow’s soft opening will be a gentle lead-in to the main event – a big party set to kick off at noon on Australia Day with a full set of DJs, dancers, musicians and a performanc­e by headline DJ Brooke Evers.
