Classic date nut loaf
A LOAF that most people will love.
And is great to enjoy with a cuppa.
WHAT YOU NEED:
■ 1 cup of boiling water
■ 1 black tea tea bag
■ ¾ cup pitted dried dates
■ ¾ cup, lightly packed brown sugar
■ 60 g butter
■ 180 g plain flour
■ 1½ tsp ground cinnamon
■ 1 tsp baking powder
■ ½ tsp Bi-Carb Soda
■ Pinch of salt
■ ½ cup chopped walnuts
METHOD
Preheat the oven to 160°C. Grease a loaf tin.
Steep the tea bag in the boiling water for 30 seconds, then discard the tea bag.
Roughly chop the dates and put in a saucepan with the tea, sugar and butter over medium– high heat.
Bring to the boil and simmer for 1 minute.
Set aside to cool.
Sift the flour, cinnamon, baking powder, baking soda and salt into a bowl.
Add the walnuts and mix through.
Pour the cooled date mixture onto the dry ingredients and mix well with a wooden spoon.
Tip into the prepared tin. Bake for 35 minutes or until cooked through.
Serve with butter!
