Bakery set to re-open

New owner at Brumby’s Westridge

THE new owner of a popular and long-standing Toowoomba bakery will re-open the revamped shop next week.

Veteran baker Matthew Hart bought the Brumby’s at Westridge Shopping Centre in Kearneys Spring after the previous franchisee­s left earlier this year.

The shop has also been given a complete overhaul, and now features a fresh coat of paint.

Mr Hart, who has worked in the industry for 10 years and already owns the Brumby’s at Highfields, said he wanted to continue the tradition of quality baked goods that the site was known for.

“I did my apprentice­ship through Brumby’s and I rose through the ranks at Highfields there to buy part of the business and I’ve had the Highfields Brumby’s for about four years,” he said.

“We’ll also be working on health bread loaves, which I think the market is missing right now.

“I’ve just created a whole new sourdough, which I think is fantastic.

“(The) three sisters (that were) there before knew how to run a bakery. They were fantastic franchisee­s.”

Mr Hart has won local and state awards for his bread, scones and sourdough, and hoped to continue that with the new location.

He said he had confidence in his staff at Highfields to keep running the business while he focussed on Westridge.

“We have great staff out there, and I wouldn’t be able to do this right now if I didn’t have that great staff,” he said.

“They run a tight ship out there so I’m going to focus a little more on the new shop.”

The shop will open on August 16.
