Sausage casserole
WHAT YOU NEED
■ 1kg sausages (flavour of your choosing)
■ 1 brown onion (sliced)
■ 1 tbls olive oil
■ 3/4 cup water
■ 1/4 cup tomato sauce
■ 1/4 cup barbecue sauce
■ 1tbls worcestershire sauce
■ 35g pkt french onion soup mix
■ 1 tbls plain flour
■ 1/2 cup grated cheese
■ 1kg potatoes for potato mash
■ 40 grams butter
■ 3/4 cup milk
METHOD
Peel and boil potatoes (add a pinch of salt) until tender (20-25 mins) then remove.
Add butter and milk and mash until all lumps removed, then set aside.
Place oil in pan and brown sausages. Once this is done remove sausages and then brown the onion.
Combine tomato sauce, barbecue sauce, worcestershire sauce, soup mix, flour and water and whisk thoroughly.
Add sausages back into the pot with onion and pour in sauce mixture and bring this to the boil.
Spread potato over the top of the casserole and sprinkle with cheese. Cook for a further 20-30 mins until cheese is golden.
