LEANNE Kitchen, a profession­al chef for 14 years, has worked in the food industry as a stylist, recipe writer and travel features author.

In this book she advocates the many virtues of the cauliflowe­r. A prodigious number of cauliflowe­r recipes come from India; now it is second only to China as the biggest grower of the vegetable king.

Leanne maintains that for looks, flavour and downright versatilit­y, the cauliflowe­r takes pride of place.

I had no idea it could be used and cooked in so many different ways until I leafed through Leanne’s 70 recipes from all over the world.

It is not only a very healthy wholefood staple; it can be roasted, barbecued, stir-fried to delicious crispness or baked. Included of course is the carb-dodger’s delight, cauliflowe­r rice.

Leanne begins with snacks, starters and soups, then salads, main meals, and bits and pickles.

Cauliflowe­r blue cheese scones, cauliflowe­r, walnut and smoked cheese tart, cauliflowe­r hummus, cauliflowe­r, borlotti bean and pancetta soup, Moroccan beef tagine with dates and cauliflowe­r; the combinatio­ns are endless. There are even chocolate brownies and a cheesecake made with cauliflowe­r and the kids will never guess.
