CLINKERS ROCKY ROAD MOUSSE CAKE

SERVES 12. PREP 45 MINS. COOK 10 MINS.

INGREDIENT­S

• 2 x 180g blocks milk chocolate, chopped

• 150g (1 cup) Pascall Clinkers, coarsely chopped, plus extra, coarsely chopped, to decorate

• ½ x 250g pkt shortbread biscuits, coarsely chopped

• 110g (½ cup) raspberry lollies

• 25g (⅓ cup) shredded coconut

• 10 pink marshmallo­ws, halved CHOCOLATE MOUSSE

• 500g dark chocolate, finely chopped

• 750ml (3 cups) thickened cream CHOCOLATE GLAZE

• 180g block dark chocolate, finely chopped

• 185ml (¾ cup) thickened cream

• 2 tbsp glucose syrup

METHOD

1 Grease a 22cm (base size) round springform pan. Line base and side with baking paper.

2 Place milk chocolate in a microwave-safe bowl. Microwave on High, stirring every 30 seconds, until melted and smooth. Set aside for 15 minutes to cool. Add the Clinkers, shortbread, lollies, coconut and marshmallo­ws. Stir until combined. Press mixture firmly over base of prepared pan.

3 To make the mousse, place the dark chocolate in a heatproof bowl over a saucepan of simmering water (make sure the bowl doesn’t touch the water). Stir for 34 minutes or until melted and smooth. Remove from heat and set aside to cool slightly. Use electric beaters to beat the cream in a bowl until soft peaks form.

Fold one-third of the cream through the dark chocolate. In 2 more batches, fold through the remaining cream until well combined.

4 Spoon mousse into pan. Tap pan on bench a few times to remove any air pockets. Use a spatula to smooth the surface. Cover. Place in the fridge for 6 hours or overnight to chill. 5 To make the glaze, combine all the glaze ingredient­s in a small saucepan. Stir over low heat until melted and smooth. Remove from heat and set aside to cool slightly. Pour half the glaze over mousse. Place pan and remaining glaze in fridge for 1 hour to chill.

6 Transfer the cake to a serving plate. Use electric beaters to beat the remaining glaze for 30 seconds or until lightened in colour. Spoon into a piping bag fitted with a large plain nozzle. Pipe peaks around edge of the cake. Decorate peaks with extra Clinkers.
