JFX owner Ryoji Tanaka says he keeps his menu as close as possible to what you’ll find in his home country Japan. Along with most seafood, prawns (or ebi) are a common ingredient in Japanese food, so it makes sense for a prawn gyoza to sit sweetly on the JFX menu.
