Owner Mitch McCluskey recommends the wagyu gyoza – house-made wagyu, mushroom duxelles and scallion with chilli soy dip. “The wagyu works really well because the fattiness of it means it melts a little in the gyoza. The secret (to the perfect gyoza) is definitely in the filling and attention to detail.” Also on the menu is the Etsu gyoza, bursting with pork, chicken, chives and cabbage to dunk in chilli soy dip.
