APPRENTICE chef Henry Wu really knows how to make a California roll.

Henry, who works at The Star Gold Coast, took part in a sushi making class with Kiyomi’s Restaurant executive chef Chase Kojima.

For Henry, it was a privilege to learn from one of the best Japanese chefs in the business.

“It’s great to see world-class chefs and pick up ideas from them — even simple things like dipping your knife in water prior to cutting the sushi roll, but ensuring there is no excess water on the blade.

“It was also interestin­g to see how chef Chase kept his cooking station while making the sushi; keeping your chopping board clean and constantly wiping it down was a point.”

Henry, 18, whose dad is a chef specialisi­ng in Chinese cuisine, always knew he wanted to work in the food industry.

“The great thing about doing my apprentice­ship at The Star Gold Coast is that I’ll be given the opportunit­y to work in each of the restaurant­s and dining venues with cuisines ranging from cutting-edge Japanese, to traditiona­l Italian, modern Australian and everything in between.

“Across the three years, I’ll be able to try my hand at different styles and techniques before deciding what my passion is and what I’d like to specialise in as a chef.”

The Star Culinary Institute is accepting applicatio­ns for the chef apprentice­ship program until May 28.
