The Surfers Paradise eatery has kicked off their weekend roasts, offering an hour-and-a-halfcooked roast beef striploin every weekend. Paradox manager Darren Langen says the secret to the perfect roast is patience and attention to detail. “Ensure you have a good seal on the meat making it nice and brown, and give it a good long rest after cooking,” he says. “Always reserve the meat juices for pan gravy. Other essentials are crispy roast potatoes and a giant Yorkshire pudding.”
