PUMPKIN SOUP SNACK O’ LANTERN

WHO better to seek out for a good, old fashioned bowl of soup for tomorrow’s winter solstice than Jessica Winters.

The owner of Mermaid Waters cafe Double Barrel Kitchen said her pumpkin soup is like a hug.

“A bowl of soup is like a big warm hug from the inside, it’s comfort food,” she said.

“We’re pretty blessed here on the GC, there’s only really two weeks of cold weather where we think we’re going to die so we need food.

“But after that it’s back to bikini weather, so don’t eat too much!”

Chef Adam Vernon Huffines said his cute but classic pumpkin soup should hit the spot for the solstice.

“I was just taking advantage of fresh, local, seasonal pumpkins,” he said.

“But with the plating itself they were a little more petite than I expected so I had to figure out a way to still use the whole pumpkin.

“The secret to the perfect pumpkin soup is to stick to the basics and avoid cream.”
