PUTTING KOREA ON BIBIMBAP

WE’VE gone through the craze of acai, buddha and poke bowls, now bibimbap is, well, bowling them over.

The traditiona­l Korean cuisine is most recently available at Burleigh eatery Stones Throw. “It’s not a fad I’m trying to roll with, but it’s my personal go-to dish and it’s simple, tasty, hearty and healthy as well,” owner Cameron Chartres said.

“I think bowls are simple, quick and fun to eat and that’s why they’ve gone crazy.

Mr Chartres said while bibimbap is on trend here, it’s a poor dish in Korea.

“Over there, it’s sort of a staple made with a lot of ingredient­s that are easily accessible, it’s kind of a peasant’s dish,” he said. “Ours is a take on the same concept. We’re using brown rice instead of white and adding a lot of pickled and fermented vegetables – carrot, fennel kimchi, wombok and then topped with a crispy egg.

“We only added them recently and most people that have them come back for it again. We can make them with beef or vegetarian and they go for $17.50.”
