This is one of owner Jeremy Davidson’s favourites – a maple hot cake cooked to order in a traditional skillet pan topped with shiraz-poached pear. “Top it with lashings of vanilla mascarpone and caramel with a candied walnut crunch. This dessert is inspired by the things we love at this time of year: red wine, soft hot cakes, warm caramel and guilty treats.”
