FLOATING NOODLE

Can Tho are touted as a little slice of Melbourne in Runaway Bay, but this dish suggests they’re straight outta Hogwarts. It’s called the Mi Kho – dry fried egg noodle with enoki mushroom, pork belly, baby shrimp, onion and choy sum, topped with fried quail eggs, crispy shallot and chives. Your eyes don’t deceive you, that fork is indeed floating, but you’ll have to head into the restaurant to see just how it’s done.
