SWEET SUCCESS FOR NEW KID ON THE CHOC

NO, these aren’t coffee beans. This story is sweeter than that.

Peter Mengler is the only bsuiness owner on the Gold Coast making organic, vegan chocolate from “bean to bar”.

The owner of Cravve buys cocoa beans directly from farmers across the Asia Pacific region and brings them to his Burleigh chocolate factory to create cocoa “chips”, bars and drinking chocolate.

“We actually start with cocoa (beans) then they are roasted, winnowed and refined (into a coarse paste),” Mr Mengler said. “Most chocolate people just import the chocolate, melt it and turn it into bars.”

Mr Mengler said the paste went into a “conche” before finally receiving a buttery, creamy texture.

Creating the chocolate this way meant more control over the final product., said Mr Mengler who supplies to 500 clients throughout Australia.

“We can supply as raw chocolate, roasted nibs ... it’s a broader spectrum to supply to market.”
