RICHARD Cavill hails from one of the pioneering families of the Gold Coast, with Surfers Paradise’s famous Cavill Ave named after his grandfather Jim. Mr Cavill has run Cav’s Steakhouse for more than 30 years at Labrador, where the hacienda-style restaurant has become a Gold Coast institution and must-do stop-off for tour groups, locals and regular visitors. Before Cav’s, Mr Cavill did the rounds of Queensland pubs, working at the Pacific Hotel, Lonestar Tavern and Fisherman’s Wharf. “I started the restaurant thinking the restaurant industry would be easier than the hotel industry – but that wasn’t quite right.” Cav’s Steakhouse drew on the success of another family institution, the Breakfast Creek Hotel. Mr Cavill has built the restaurant from a 50-seat steakhouse to a 250-seat venue. For the record, his favourite steak is rib fillet.
