CHEF STICKS WITH WINNING WAFFLES

FIRST came ice cream in a cone, now we have waffles on a stick.

Gold Coast chef Mark Dela Paz, who has worked at top restaurant­s such as The Cambus Wallace, has started selling the colourful desserts at Miami Marketta.

“I noticed a lot of people struggling to eat waffles from a plate,” said the 30year-old, who is selling more than 100 every night.

“And for me to survive in this atmosphere where there’s so much competitio­n, I knew I had to do something different.

“We get huge line-ups every night, I have to pack hundreds now so that nobody misses out.” Mr Dela Paz will soon start selling out of a food truck, called Edizon’s Street Food, in multiple locations.

The waffle flavours include apple pie (apple, white chocolate, caramel), tooth fairy (gummy bears, sour worms), strawberri­es and chocolate, malteasers, Kit Kat and Mars Bar.
